Mix the following in a bowl with your hands to mush it together well:
1 1/4 cup Mild PC Salsa
1 cup SKYR Plain Yogurt
3 Tbsp Epicure French Onion Mix
1 tsp Black Pepper
3 Chopped Green Onions
2 Cups Cooked Royal Brown Basmati Wild Rice (I cooked in rice cooker first)
3 Raw Eggs
2 Pounds Lean Ground Turkey
Put half of the mixture into 2 Meatloaf pans and fill 1/2 way.
Add:
6 Hardboiled Eggs (3 eggs per pan length wise down the middle of the meatloaf tray. Fill remaining pan with mixture)
Cover and cook at 350 for 60 mins. Pull off cover and cook another 10 mins. Drain any fat.
Add:
tomato slices
1/2 Cup Parmesan Cheese to top (1/2 cup split between 2 trays)
Cook another 5-10 mins.
Then, Broil until "golden"
